Salmon Pita Pockets

The Cinnamon MomAs it gets hot again outside, I have to share a light, refreshing meal that my family loves: salmon pita pockets! These are perfect if you’re in a time crunch because fish cooks super fast and you can have these pitas on your table in minutes.

My husband and daughters all love salmon for so many reasons. It has a great natural flavor so there’s no need to season it too much. A little salt, pepper, and smoked paprika always do the trick for us. Salmon is a really filling fish, too, so you don’t have to eat a lot to feel satisfied.

On top of that, I always feel good about feeding my family salmon because there are a ton of health benefits. The list of nutrients could go on forever, but these are the biggies:

  • Protein- contributes to bone strength and muscle growth
  • B Vitamins- help with energy and function of heart and brain
  • Omega 3 Fatty Acids- shown to reduce inflammation, lower blood pressure, and reduce the risk of disease

To make our pita pockets, we spread a dollop of hummus inside our pitas and then stuff them with yummy salmon and cucumber slices. The fish is zesty and flaky with a subtle crunch from the cucumbers. With so many fun flavors and textures working together, it’s the most amazingly tasty combination!

I keep my salmon pita pockets pretty basic, but you can add so much more depending on what your family prefers. Bell peppers, tomatoes, avocado, spinach or lettuce. Too many delicious options! You can even eat these right off the stove or let them chill in the fridge. They taste great hot and cold!

Instructions
  1. Sprinkle salmon with salt, pepper, and paprika.
  2. Drizzle olive oil in a pan over medium heat. Put salmon in pan with the skin side facing up for about 8 minutes. You should be able to see a noticeable line where the bottom half of the fish has cooked and the top has not.
  3. Flip salmon over, cover the pan, and turn heat off. Allow to steam until salmon is finished cooking.
  4. Once salmon is fully cooked, use a fork to break it into small pieces.
  5. If you want your pitas warm, you can heat them in the microwave for 20-30 seconds.
  6. Time to assemble your pitas! Spread desired amount of hummus inside your pockets and fill with hummus and cucumbers.
  7. Eat and enjoy!

  3. I really like the idea of putting salmon into a pita. It looks like a fun way to prepare it. We usually either do maple glaze or garlic and butter so I am going to have to try adding paprika 🙂
