Red Bean Hummus Recipe

Red bean hummus is a healthy, hearty appetizer or snack that’s perfect for sharing with friends! My family loves hummus, but I hadn’t attempted to make it myself. Now that I know how easy it is, I never have to buy hummus from the store again!

For this recipe, you’ll need one eggplant, one can of red beans, 2 cloves of garlic, juice from one lemon, your favorite seasoning (I used cumin, paprika, salt, and pepper), and European Extra Virgin Olive Oil.

European Extra Olive Oil

Red Bean Hummus

To get started on your hummus, roast the whole eggplant in a 400º F oven for about 40 minutes. Once it’s soft, remove the skin. If your eggplant has a lot of excess liquid, you can gently squeeze and blot it out with a towel. The less moisture your eggplant has, the denser your hummus will be.

When your eggplant is ready, put it in your food processor with the red kidney beans, garlic, cumin, smoked paprika, and lemon juice. Pulse all of the ingredients together and then slowly add the Olitalia European extra virgin olive oil until the mixture is smooth.

Give it a taste and then add salt and pepper as needed! Once it passes the taste test, spoon the hummus into a bowl and drizzle a swirl of extra virgin olive oil on top. That’ll give it one more boost of flavor and add to the smooth consistency.

Serve it with your favorite dippers! Pita bread and slice bell peppers are usually requested in our house, but I also enjoy hummus with cucumber slices, carrot sticks, and cherry tomatoes.
