No-Bake Cranberry Almond Butter Bars

When it comes to easy snacks, you can’t beat these no-bake cranberry almond butter bars! They’re inspired by our cinnamon raisin peanut butter balls, but with slightly different flavors and in square form. All you need is dried cranberries, almond butter, honey, sweetened coconut flakes, oats, salt and a few minutes to mix up this protein-filled snack!

Goose and Belle love joining me in the kitchen and these bars are great for their little helping hands. We start by mixing together the almond butter, oats, honey, and a pinch of salt. Then we add in the dried cranberries and coconut flakes. A spatula works great, but it’s actually a bit faster (and a lot more fun) if you use your hands.

Once we have all of the ingredients mixed up, we press it into an 8×8 pan. I line ours with a piece of parchment paper so the bars come out easily. To spread the mixture out, I use a spatula first and then my hands to make sure it’s all even. Then we stick it in the fridge for a while to harden up. We’ll usually make a batch in the morning so they’re ready by our afternoon snack time, but it takes around one hour for them to get firm.

I cut our cranberry almond butter bars into 16 pieces and store them in the refrigerator until we’re ready to eat them. You can eat just one and feel completely satisfied, but they taste so good that they usually only last a few days in our house.

If you prefer energy balls, you can also scoop the mixture out into small rounds. It’ll make 20 pieces!

You can also play around with the ingredients and try other nut butters in these bars. I think some chopped, roasted almonds would give it a nice texture and dark chocolate or white chocolate morsels would make it more indulgent.

Instructions
  1. In a medium bowl, mix together the oats, salt, honey, and almond butter.
  2. Fold in the dried cranberries and coconut flakes.
  3. Press the mixture into an 8x8 pan lined with parchment paper and put in the fridge to firm up for at least one hour.
  4. Cut into squares and enjoy!

You can also scoop the mixture into 20 bite-sized balls.
