Chicken Fajita Quesadillas

Quesadillas have been one of my favorite things to eat since I was a little girl! If I got hungry, I’d just melt some cheese in a tortilla and have a super easy mini-meal. Now that I’m a “grown-up”, I’ve amped up my game with these chicken fajita quesadillas! Still simple to make, but full of way more flavor and goodness.

In a large skillet or griddle on medium heat, cook the sliced bell peppers and onions in olive oil for 5 minutes. You can definitely chop your veggies up into smaller pieces if you like a neater bite.

Let the veggies soften a bit and then add the chicken, garlic, chili powder, cayenne, salt, and pepper to the pan. Stir every minute or so until the chicken is cooked all the way through, around 10 minutes. Do a little taste test and add more seasoning if you think it needs it. My husband is a huge cumin fan so sometimes I’ll sprinkle a little of that on, too.

Once the chicken is ready, I put all of the veggies and meat on a plate so that I can use the same pan to heat up my quesadillas. I use a towel to wipe any excess liquid from the pan and start placing tortillas in it. You can cook your quesadillas in butter or oil to make the tortilla extra crispy, but it tastes totally fine without.

On half of the tortilla, sprinkle cheese, put a scoop of veggies and chicken on it, sprinkle more cheese, and then fold the other half of the tortilla over. Wait until the bottom starts to brown just a bit and then flip the quesadilla over with a spatula. When both sides are golden brown and the cheese has melted, remove the quesadilla from the heat and cut it into triangles. Repeat this process with the remaining ingredients.

My family likes to eat our chicken fajita quesadillas with seasoned black beans and avocados or guacamole. The avocado in these pictures is just mashed with a little salt and lemon juice. Sour cream also goes well with these!

Instructions

  4. Place tortillas in the pan. On half of the tortilla, sprinkle cheese, scoop some of the veggies and chicken on, sprinkle more cheese, and fold the other half of the tortilla over. Once the bottom starts to lightly brown, flip the quesadilla over.
  5. When both sides are golden brown and the cheese has melted, remove the quesadilla from the heat and cut it into triangles. Repeat this process with the remaining ingredients.
  6. Serve with black beans, avocados, or sour cream. Enjoy!
