We’re gearing up for Valentine’s Day with these super easy, super delicious heart quesadillas because nothing says “I love you” like cheesy, melty goodness inside of heart-shaped carbs!
Quesadillas are always a popular meal around here. Our fajita quesadillas and sweet potato and black bean quesadillas are part of our regular rotation. I took the flavors of these heart quesadillas in a different direction by using sun-dried tomato tortillas and shredded Italian cheeses. With a little marinara on the side for dipping, it’s almost like biting into a slice of pizza. You can absolutely add any meat or veggies to these, but in the interest of time, I just stuck with cheese.
The magic here is honestly just that the food is heart-shaped because fun shapes make everything taste better. I used these inexpensive cookie cutters from Amazon. The set has hearts, stars, and flowers and I love that each shape comes in different sizes. Don’t be surprised if you see more of these shapes soon!
Heart quesadillas are an incredibly simple, savory way to enjoy Valentine’s with your little ones! I’m sure we’ll have them for lunch a couple more times between now and then!

Heart Quesadillas
Ingredients
- olive oil cooking spray
- 2 sun-dried tomato tortillas
- 2 cups shredded Italian cheese
- 1/2 cup marinara for dipping
Instructions

Heat a pan or skillet on medium and lightly spray with the olive oil.

Use a cookie cutter to carve 8 hearts out of the tortillas.

Lay 4 of the tortilla hearts in the pan, sprinkle about half a cup of cheese on each, and place remaining 4 hearts on top of the cheese.

Heat the quesadillas on each side for 1-2 minutes, until the cheese has melted and the tortilla is slightly crispy.

Serve the quesadillas hot with marinara for dipping and enjoy!
