Skillet Breakfast Potatoes and Eggs in a Basket

One of my favorite things about the weekend is enjoying a hearty breakfast with my family! After a fast-paced, borderline chaotic week of school, work, and activities, it feels incredible to slow down and start our morning with a savory, fresh from the stove meal.

Our current menu of choice is skillet breakfast potatoes and eggs in a basket. Both recipes call for simple ingredients, require little effort, and are deliciously satisfying.

The most recent time that I made this meal, I was able to try Blue Diamond pans. Breakfast Potatoes and Eggs in a Basket

Equipment

  • Blue Diamond 11" Frypan
  • Blue Diamond 9.5" Frypan

Ingredients

  

Breakfast Potatoes

  • 2 tbsp unsalted butter
  • 2 lbs red potatoes about 4-5 medium
  • 1/2 yellow onion
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1-2 tsp Creole seasoning

Eggs in a Basket

  • 4 tbsp unsalted butter
  • 4 slices sourdough bread
  • 4 eggs
  • black pepper

Instructions

 

Breakfast Potatoes

  • Chop the potatoes, bell peppers, and onion into small pieces. You can peel the potatoes if you like, but it isn't necessary because the skin will get very soft as they cook.
  • Melt the butter over low-medium heat in the 11" Blue Diamond frypan.
  • Add the vegetables to the pan and sprinkle on the Creole seasoning. Stir the vegetables so that everything gets coated in butter and seasoning.
  • Let the vegetables cook, stirring occasionally so that all pieces cook evenly. They should be tender and ready to eat in about 10-12 minutes.

Eggs in a Basket

  • Use a cookie cutter to carve a hole out of the middle of each slice of bread. We used a circle this time, but other shapes (like hearts or stars) are fun, too! Set aside the insides of the bread you've removed.
  • Melt one tablespoon of butter in the 9.5" Blue Diamond pan over low-medium heat.
  • Place one slice of bread in the pan and let it toast for about two minutes.
  • Flip the bread over so that the toasted side is facing up and crack one egg directly into the hole. Sprinkle a little fresh ground pepper onto the egg.
  • Let that cook until the bottom of the bread is golden brown and the egg is cooked to your preferred firmness. If you like a runny yolk, you can take it off the heat after a few minutes. I like to flip the bread one more time and cook the yolk for an additional minute.

Notes

When we don’t have Creole seasoning for the potatoes, I just sprinkle on salt, pepper, cayenne pepper, paprika, thyme, oregano, and garlic powder to taste.

Slices of avocado go perfectly with this meal, but you can add fresh fruit for a touch of sweetness!
