These sweet potato burgers with avocado spread are such a delicious way to enjoy a Summertime dinner with your family! I baked our patties in the oven, but you could definitely toss them on the grill to give them an authentic barbecue essence.
A few years ago, I shared my turkey burger recipe (which is amazing), but we have since adopted a pescatarian diet. I was craving something that was as satisfying as meat and the frozen veggie patties from the grocery store just weren’t cutting it. I came across this sweet potato burger recipe from The Kitchn, made a few modifications, and it was exactly what I wanted!
Surprisingly, we already had all of the ingredients we needed except hamburger buns. The patties are made of cannellini beans, grated sweet potato, paprika, turmeric, cayenne pepper, oregano, thyme, salt, sunflower seeds, green onions, egg, and oats. No need to use a food processor, a fork works great! Shape the mixture into eight patties and bake in a 350ºF oven for 15 minutes on each side.
I make the spread by mashing avocado in a small bowl with a little pico de gallo. You can always use guacamole, but I actually prefer my understated version. When the patties are ready, put them on a bun and spread some avocado on top.
So simple, right?
The flavors in these sweet potato burgers are incredible! My husband was worried that the patties would be too sweet, but it is a completely savory burger. If you like stacking your burgers with toppings and condiments you can… I truly don’t think it needs anything other than the avocado spread.

- 1 can cannellini beans mashed
- 1 medium sweet potato peeled and grated
- 1 tbsp paprika
- 1/2 tbsp turmeric
- 1 tsp cayenne pepper
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 cup sunflower seeds coarsely chopped
- 3 green onions finely chopped
- 1 egg
- 1 cup oats
- 4 avocados
- 1 tbsp pico de gallo or salsa
- 8 hamburger buns

- Preheat your oven to 350°F and line a baking sheet with parchment paper or a non-stick baking mat.
- In a bowl, use a fork to mix the mashed beans, grated sweet potato, paprika, turmeric, cayenne pepper, oregano, thyme, salt, sunflower seeds, green onions, egg, and oats.
- Divide the mixture into 8 balls and flatten them into patties on your baking sheet.
- Bake the patties for 15 minutes, flip them over, and bake for 15 minutes longer.
- To make your spread, mash the avocados and stir in the pico de gallo.
- Place your patties on the hamburger buns with a spoonful of avocado spread and enjoy!
