When it comes to baking, my daughters love joining me in the kitchen to make our mini lemon cupcakes! Although I enjoy the quality time, they seem to channel their inner SOUR PATCH KIDS when we bake together. They start sour by sneaking pieces of candy and making chaotic frosting messes, but then they’re so sweet and appreciative that my heart can’t help but smile. It’s like riding a delicious little roller coaster!

Instructions
Lemon Cake
  1. Preheat your oven to 350 degrees and line a mini muffin pan with paper liners.
  2. Use a mixer to cream together the sugar and butter in a large bowl.
  3. Add in the eggs, vanilla, whole milk, lemon zest, and lemon juice.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Slowly pour the flour mixture into the wet ingredients, stirring until all of the ingredients are completely blended.
  6. Spoon the batter equally into the cupcake liners, filling each cup just over halfway.
  7. Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean. Take them out and allow them to cool.
Yellow Buttercream Frosting
  1. Start by creaming the butter with a mixer.
  2. Beat in the powdered sugar, adding half of a cup at a time.
  3. Pour in the vanilla and milk and beat for 2 minutes.
  4. Add the food coloring and beat for 2 more minutes (for a more vibrant yellow, add more food coloring).
  5. Using a piping bag or butter knife, add a dollop of frosting to each cooled cupcake.
  6. Top each cupcake with one yellow SOUR PATCH KID and enjoy!
Recipe Notes

This recipe will make more than one pan of mini cupcakes. Repeat the process to make more batches or store unused batter in the freezer!
