We’re in South Carolina! Everything is going fine with our move, just trying to get settled in. I’ve been sharing some updates on Instagram and will have some move-related posts here, but I just wanted to quickly stop by with a yummy recipe for sweet potato kale soup!
Sweet potato kale soup is a favorite of everyone in our home and is especially great during cool Fall days. If you have a hard time getting your kids to eat kale, this is a winner. My girls always clean their bowls and ask for seconds because it’s just that good.
The main ingredients are sweet potatoes, kale, Italian sausage, and cannellini beans. Nourishing, super tasty, and oh-so-easy to make!
I will say that one key to making this sweet potato kale soup fantastic is a Dutch oven. I’ve tried it in a stockpot and it didn’t even compare. Dutch ovens are magic and they make everything taste SO GOOD! If you do not own one, I strongly urge you to go shopping!

- 1 tbsp olive oil extra virgin
- 1 yellow onion diced
- 12 oz ground Italian sausage
- 1 large sweet potato peeled and chopped
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp ground pepper
- 1/2 tsp thyme
- 4 cups chicken broth
- 1 cup water
- 15 oz cannellini beans drained
- 16 oz kale chopped
Ingredients

- Pour the oil into your Dutch oven on medium heat.
- Cook the onions and Italian sausage, about 8-10 minutes. Use a wooden spoon to break up the sausage and stir every minute.
- After the onions and sausage are completely cooked, add all of the remaining ingredients to the Dutch oven, except for the kale, and bring it to a boil.
- Cover the Dutch oven and turn the heat to low until your sweet potatoes are tender, about 15 minutes.
- Add kale to the Dutch oven and continue simmering for 5 minutes or until kale is cooked.
- Stir, serve, and enjoy hot!
Omit sausage for a vegetarian option.
Also great with fresh slices of Italian bread on the side.

I am not a fan of sweet potatoes at all. However, this soup looks delish and comforting! Do you think I could sub it with red potatoes, or a squash?

I love sweet potatoes but stopped eating them when I gave up carbs. I may have to cheat bc I’m dying for some soup and this looks delish! Thanks for sharing!
