Cook the onions and Italian sausage, about 8-10 minutes. Use a wooden spoon to break up the sausage and stir every minute.
After the onions and sausage are completely cooked, add all of the remaining ingredients to the Dutch oven, except for the kale, and bring it to a boil.
Cover the Dutch oven and turn the heat to low until your sweet potatoes are tender, about 15 minutes.
Add kale to the Dutch oven and continue simmering for 5 minutes or until kale is cooked.
Stir, serve, and enjoy hot!
