A couple of weeks ago, we started experimenting with some breakfast meal prep ideas and I am completely obsessed!
I’m an avid meal planner, but I haven’t done much meal prepping. In case you’re unclear about the difference, meal planning is making a menu of what you’re going to eat and having the ingredients on hand to cook later. Meal prepping is actually assembling or cooking the food so it’s ready to eat when you want it.
The meal planning we do mostly focuses on lunch and dinner while breakfast tends to be pretty boring. It was clearly time to get out of our cereal rut!
With two small hangry kids and a husband hurrying off to face Los Angeles traffic every morning, we knew we needed to devise a simple but yummy breakfast plan.
We decided that we would make breakfast burritos, croissant sandwiches, and English muffin sandwiches and freeze them in batches. They all require similar ingredients (meat, eggs, and cheese), would be easy to put together, and are always satisfying.
Our recipe is not 100% precise, but scroll down for the steps and quantities that worked for us. This is one of those things you just fiddle with and create to your preferences. We use our double burner griddle because it’s easy to cook in bulk. It took less than an hour to make and wrap all 24 items (6 burritos, 12 croissants, and 6 English muffins) and we could have easily made more.
Surprisingly, everything microwaves really well! It’s so convenient now to take a sandwich out of the freezer, heat it up while I slice some fresh fruit, and get on with the morning. And my husband loves that he can grab a sandwich and an apple as he heads off to work. Such a perfect way to start the day!

- 24 slices turkey bacon
- 18 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
- 6 flour tortillas 8"
- 12 croissants medium
- 6 English muffins
- 2 cups shredded cheddar cheese
- 18 slices cheddar cheese
Ingredients

- Cut bacon into thirds and cook in a large skillet or griddle according to package directions. Set bacon aside on paper towels when done. Do not drain skillet of bacon grease.
- Whisk eggs, salt, and pepper together in a large bowl.
- Scramble eggs in the same skillet using the bacon grease.
- It’s time to assemble! Burritos will get 3 pieces of bacon, a heaping spoonful of eggs, and a generous sprinkle of shredded cheese. Croissants and English muffins will each get 3 pieces of bacon, a heaping spoonful of eggs, and one slice of cheese.
- Wrap burritos and sandwiches individually in freezer paper or plastic baggies. Label with date and store in freezer.
- To eat, heat burrito or sandwich in microwave for 45-60 seconds.
- Grab a piece of fresh fruit and enjoy your breakfast!
Incorporate any of your favorite breakfast meats, like pork bacon or sausage, or make it vegetarian.
Potatoes and pico de gallo make great additions to breakfast burritos.
Use any types of cheese you like.
Add more seasoning or herbs to your eggs for a variety of flavors.
I usually end up skipping breakfast due to lack of time. Then overindulge in lunch because I am so hungry. This would be a great solution. Thank you.
That’s exactly what was happening! We were starving by midmorning, which made us cranky and impulsive when we had the chance to eat.
We do make egg wraps ahead of time as well, but I’ve never done the croissant. That looks amazing! Might have to try that next!
I’m not making any health claims, but I will say that the croissants are delicious! They’re my fave!
Ooh I love all these ideas, my only problem is I don’t have a microwave. Would these work well reheated in the oven or stove?
I haven’t tried the oven or stove for these, but I’m sure they would work. It would just take a little longer than the microwave so make sure you have extra time!
My hubby has been saying he wants to start meal prepping for breakfast because he doesn’t ever have time to eat before work ! Thanks for the ideas !
You’re welcome! Take an hour or so during an off day to make everything and then it’ll be ready when he goes to work. If my husband doesn’t have an extra minute to heat his sandwich up at home, he’ll just do it when he gets to his office and eat there!
