  1. Cut bacon into thirds and cook in a large skillet or griddle according to package directions. Set bacon aside on paper towels when done. Do not drain skillet of bacon grease.
  2. Whisk eggs, salt, and pepper together in a large bowl.
  3. Scramble eggs in the same skillet using the bacon grease.
  4. It’s time to assemble! Burritos will get 3 pieces of bacon, a heaping spoonful of eggs, and a generous sprinkle of shredded cheese. Croissants and English muffins will each get 3 pieces of bacon, a heaping spoonful of eggs, and one slice of cheese.
  5. Wrap burritos and sandwiches individually in freezer paper or plastic baggies. Label with date and store in freezer.
  6. To eat, heat burrito or sandwich in microwave for 45-60 seconds.
  7. Grab a piece of fresh fruit and enjoy your breakfast!
Recipe Notes

Incorporate any of your favorite breakfast meats, like pork bacon or sausage, or make it vegetarian.

Potatoes and pico de gallo make great additions to breakfast burritos.

Use any types of cheese you like.

Add more seasoning or herbs to your eggs for a variety of flavors.
