Butterscotch Pecan Oatmeal Cookies

These cookies are sweet and spicy, chewy and crunchy, and the perfect little treat to share in the fall or winter!

Ingredients
  

  • 3/4 cup unsalted butter softened (1 1/2 sticks)
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 3 cups quick oats uncooked
  • 1 cup butterscotch chips
  • 1 cup pecans chopped

Instructions
 

  • Preheat the oven to 350 F.
  • Using a large bowl and a mixer on medium speed, cream together the butter and both sugars until smooth.
  • Mix in the eggs, vanilla extract, and almond extract.
  • In a separate bowl, combine the flour, baking soda, cinnamon, nutmeg, cloves, salt, and oats.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Fold in the butterscotch chips and pecans.
  • Place tablespoonfuls of dough onto a cookie sheet and bake for 10 minutes.
  • Cool for a few minutes before eating and store in an airtight container.
