Whether or not your family eats meat, everyone in your home will devour these deliciously simple vegetarian stuffed bell peppers!
About three years ago I shared my original Easy Cheesy Stuffed Bell Pepper recipe, which included Italian sausage. The next year, my family switched to a vegetarian diet and I’ve been perfecting this version ever since. The essence of this meal is the same (still cheesy and satisfying), but it’s a yummy alternative if you’re trying to cut back on meat.

Vegetarian Stuffed Bell Peppers
Ingredients
- 1 tbsp avocado oil
- 5 bell peppers any color
- 1/2 onion
- 1 15oz can diced tomatoes
- 1 tbsp minced garlic
- 2 15oz cans black beans
- sea salt
- ground black pepper
- paprika
- cumin
- chili powder
- cayenne pepper
- 2 cups brown rice cooked
- 2-3 cups shredded cheese
Instructions

Preheat your oven to 400 degrees.

Cut four of the bell peppers in half and remove the seeds. Arrange on a sheet pan and bake for 20 minutes.

Heat a Dutch oven or pan on medium heat. Dice the last bell pepper and onion and cook together for about five minutes. Stir in the tomatoes, garlic, black beans, and seasoning (measure to taste), and cook for another ten minutes.

Add in the brown rice and a couple handfuls of shredded cheese.

Spoon the filling evenly into each bell pepper half and sprinkle on the remaining cheese. Put the bell peppers back into the oven.

When the cheese is melted, these are ready to eat. Enjoy!
