Pesto Grilled Cheese Sandwich with Spinach and Mozzarella

I wish that you guys could sink your teeth into this grilled cheese sandwich! With a red pesto sauce, fresh spinach, and gooey mozzarella on pillowy Sara Lee® Artesano™ Brioche Bread, it is perfection in every way! Although my pesto grilled cheese is packed with elevated ingredients, it’s kid-friendly and so quick to make. It’s always a popular choice in our house!

The difference between this grilled cheese and other sandwiches starts with the bread. We use Artesano Brioche Bread from Walmart because it has a rich flavor and fluffy texture. It’s also thickly sliced so you get a substantial taste in every bite. If you aren’t using Artesano Brioche Bread in your grilled cheese, you’re doing it wrong!

To get started on your pesto grilled cheese, you’ll want to preheat a skillet to medium heat. While that warms up, you can completely assemble your sandwiches. I’ll usually make four sandwiches at a time, but you can make fewer or more depending on your family’s appetite.

Spread pesto on the inside of each slice of Artesano Brioche Bread. On half of your bread slices, layer a few leaves of spinach and two circles of mozzarella cheese. Then, close the sandwiches with your other slices of bread.

Melt a pat of butter in the skillet and cook the sandwiches on each side for about 3 minutes. I like to cover them while they cook so that the heat can work its way through and really melt that dense cheese. Once the bread is golden and toasty and the cheese is about to spill out, put the sandwiches on plates and cut them in half. So fantastically easy and delicious!
