The Ultimate Kale Salad With Aged Balsamic Dressing

I love this kale salad because you literally just toss a bunch of ingredients together and… VOILÀ! It has a fun blend of flavors and textures and is so refreshing, especially as the weather gets warmer. My kids will even eat it without complaining!

It’s so important right now that we are taking excellent care of our bodies. Quarantine baking is comforting and fine in moderation, but there’s nothing that boosts your energy and your soul like a bowl full of fresh kale. I add in some carrots, cucumbers, tomatoes, avocados, almonds, and a little dressing for an effortless, nutrient-rich salad.

And I’ll let you in on my little secret: This aged balsamic dressing from Aldi is the ingredient that really pulls my kale salad together. I have tried dressings from other brands and other stores and they didn’t have the same magical effect. A different balsamic will suffice if that’s your only option, but I am incredibly partial to this one.

This salad is substantial enough that we eat it for dinner quite often, usually with sliced Italian bread on the side. You can also pair it with sandwiches, pasta, or bring it to a potluck to share. It stores so nicely and tastes even better once the kale has had a chance to absorb all of that delicious dressing. Your tastebuds and your tummy will be so happy after you eat this!

Instructions
  1. Remove the stems from your kale and tear or chop it into small pieces.
  2. Toss all of the ingredients (except the dressing) in a large bowl.
  3. Once the salad is mixed, you can either pour the dressing directly into the bowl or serve it on the side. A little bit goes a long way!
  4. Enjoy!
