Earlier this year, my husband’s aunt was in town and she cooked the most incredible pasta I had ever tasted! It was rich and smooth with just a hint of spiciness. I asked her for the recipe, which she recited from memory, and was thrilled to learn that it was easier to make than I thought. While I didn’t jot down every step she listed, I’ve spent the last few months improving my own version and I’m finally ready to share my one pot creamy pasta!

Like all of the meals I make, this pasta is simple and convenient. Instead of boiling the pasta in water, it soaks up extra flavor as it cooks in a sauce made from broth and heavy cream. No draining involved! This gives it the velvety taste, and using just one pot makes cleaning a breeze.

You don’t necessarily need a Dutch Oven to make this dish fantastic, but I definitely think it helps. I’ve never cooked anything I didn’t like in mine. Either way, I know you and your family are going to love this one pot creamy pasta!

One Pot Creamy Pasta

This one pot creamy pasta will have your family begging for more!

Ingredients

  

  • 1 tbsp avocado oil
  • 1 red bell pepper diced
  • 8 oz white mushrooms sliced
  • 1 tsp garlic minced
  • 2 cups vegetable broth
  • 2 cups heavy cream
  • 12 oz farfalle pasta
  • 1-2 tbsp Cajun seasoning
  • 1 cup frozen spinach chopped
  • 1 cup shredded mozzarella cheese

Instructions

 

  • Heat the avocado oil in a Dutch oven on medium-low heat.
  • Cook the bell peppers and mushrooms for four minutes. Add the garlic and cook for another three minutes. The veggies should become fragrant and start to soften.
  • Pour in the broth and heavy cream and let the pot come to a low boil. Turn the heat down a bit if it starts to foam.
  • Stir in the farfalle pasta and cook for 15 minutes. It's okay if the pasta isn't completely submerged. Just stir frequently, and it will all eventually absorb the liquid.
  • Once the pasta is cooked, turn the heat off. The liquid should have thickened by now.
  • Mix in the seasoning, spinach, and cheese. Add more or less to taste.
  • Enjoy!
