Instant Pot cheesy potatoes with broccoli are perfect as a complete meal or side dish, especially during the fall and winter when you’re craving comfort food!
I’m not exactly sure how this started, but my four-year-old has been walking around calling everyone a “potato” the past few weeks.
“You’re a potato!”
“Thank you, Potato.”
“Bye bye, Potato!”
It’s nonstop, but I laugh out loud every time! And all of this potato talk inspired me to share my Instant Pot cheesy potatoes!
With tender, bite-sized pieces, these are somewhere between a baked potato and mashed potatoes. I appreciate the simplicity of this recipe, but you can absolutely add in more toppings, like bacon, chives, or sour cream.
It’s quick, inexpensive, and delicious! Your entire family is going to love Instant Pot cheesy potatoes!
Instant Pot Cheesy Potatoes With Broccoli
Ingredients
- 5 lbs yellow potatoes about 15 small
- ½ cup vegetable broth
- salt
- black pepper
- cayenne pepper
- paprika
- thyme
- parsley
- 24 oz frozen broccoli florets 2 bags
- 2 cups shredded triple cheddar cheese
Instructions

Rinse and chop all of the potatoes. You can peel the potatoes if you prefer, but the skin will become so soft once it's cooked, you'll hardly notice it.

Add the potatoes to the Instant Pot with the vegetable broth, spices, and herbs. I always eyeball the seasoning, so sprinkle to your personal taste. Stir that all up and cook on high for eight minutes.

While the potatoes are cooking, steam the frozen broccoli in the microwave according to the directions on their packaging.

Do a quick-release on the Instant Pot when the potatoes are finished cooking. They should be nice and tender.

Add in all of the broccoli and shredded cheese and stir gently. The cheese will melt on its own as it covers the broccoli and potatoes.
