If you want a quick recipe for a festive treat, it doesn’t get easier than these fluffy red velvet cake mix cookies! All you need is a box of cake mix, a stick of butter, and a couple of eggs to bake up a batch of deliciousness. I also add in white chocolate chips and green M&M’s to make them really scream, “MERRY CHRISTMAS!”
Is red velvet not your thing? Don’t despair! You can use this exact same recipe with any flavor of cake mix and any combination of add-ins. I really love butter pecan cake mix topped with toasted pecans and chocolate cake mix with mini peanut butter cups. Mmm, so many possibilities!

Red Velvet Cake Mix Cookies
Ingredients
- 1 15.25 box red velvet cake mix
- 1/2 cup softened butter
- 2 eggs
- 1/3 cup white chocolate chips
- 1/3 cup green M&Ms
Instructions

Using a mixer on low speed, combine the cake mix, softened butter, and eggs together in a bowl until the dough is smooth.

Fold in the white chocolate chips and M&Ms. You can chill the dough if you like, but your cookies will still be delicious if you don't.

To make large cookies, use an ice cream scoop. Put six cookies onto a baking sheet so they have room to breathe and spread.

Bake the cookies for 18-20 minutes or until the edges are firm. They'll puff up in the oven and then flatten some once they've cooled.
