Y’all. It’s too hot out here. It’s the type of heat where the thought of turning on my oven or sweating in front of the stove makes me behave irrationally. For the sake of my family, and possibly yours, I’ve gathered a few of my favorite no-heat meals. They’ll keep you feeling cool and fresh through the rest of summer!
Pitas
These pitas are topped with hummus, green leaf lettuce, cucumbers, tomatoes, chickpeas, feta cheese, and Greek salad dressing. For extra flavor, I season the chickpeas with salt, pepper, garlic powder, onion powder, paprika, and dried parsley.
Berry Salad
Am I the only one who loves fruit in a salad? This spinach salad has strawberries, blueberries, cucumbers, avocado, pecans, and balsamic vinaigrette dressing.
“Chicken” Wraps
We keep it simple with lettuce, cucumbers, avocado, “chicken”, and Caesar salad dressing in a spinach tortilla. Since we’re vegetarians, this is faux chicken, but you can use any meat that makes your heart happy.
Croissant Sandwiches
I take soft, buttery croissants and fill them with red pesto, tomatoes, spinach, and mozzarella cheese. Sometimes we’ll pop these in the oven to melt the cheese, but never on a hot day.
Pasta Salad
I guess you technically need heat to cook the pasta, but this is definitely a dish best-served cold. Just grab a large bowl and toss together rotini, red kidney beans, chickpeas, cucumbers, black olives, artichokes, mozzarella cheese, Italian salad dressing, salt, pepper, and dried Italian herbs.
