Instant Pot Cheesy Potatoes With Broccoli

Ingredients
  

  • 5 lbs yellow potatoes about 15 small
  • ½ cup vegetable broth
  • salt
  • black pepper
  • cayenne pepper
  • paprika
  • thyme
  • parsley
  • 24 oz frozen broccoli florets 2 bags
  • 2 cups shredded triple cheddar cheese

Instructions
 

  • Rinse and chop all of the potatoes. You can peel the potatoes if you prefer, but the skin will become so soft once it's cooked, you'll hardly notice it.
  • Add the potatoes to the Instant Pot with the vegetable broth, spices, and herbs. I always eyeball the seasoning, so sprinkle to your personal taste. Stir that all up and cook on high for eight minutes.
  • While the potatoes are cooking, steam the frozen broccoli in the microwave according to the directions on their packaging.
  • Do a quick-release on the Instant Pot when the potatoes are finished cooking. They should be nice and tender.
  • Add in all of the broccoli and shredded cheese and stir gently. The cheese will melt on its own as it covers the broccoli and potatoes.
  • Serve and enjoy!
